Italian Rotisserie Chicken 

A run through the deli for a rotisserie chicken, combined with common kitchen ingredients makes a delicious meal in less than 30 minutes.  Add crusty bread and a simple salad and you're good to go!

1 Rotisserie chicken
12 oz penne pasta
1 28 ox can diced tomatoes
1 small onion diced
1 Tb olive oil

2 crushed garlic cloves
1/2 Tsp Italian seasoning or basil
1 can black olives and/or mushrooms
Salt and Pepper
Grated parmesan cheese to taste

Bring water to a boil for pasta.  Add salt and pasta.  Cook suggested time on package.  In the meantime, sauté onions and garlic in oil on medium high heat until soft, add undrained tomatoes, seasoning and olives and or mushrooms.  Cut chicken into serving pieces and add to tomatoes.  Lower heat if necessary and cook 10 minutes to combine flavors and heat through.  Drain pasta well and place on serving platter.  Top with chicken and sauce.  Sprinkle with parmesan cheese.  (Note:  If you like them, Italian or Greek black olives add the best flavor.)
